Without a doubt, the mixed paella is my favourite, made with a homemade rockfish stock, real saffron and the highest quality bomba rice. And of course, with rabbit and free-range chicken, prawns, langoustines, mussels and squid.
I also offer a meat paella with rabbit, free-range chicken and escargots, a traditional family recipe that was given to me by my Alicant Great Grandmother.
